Tomato puree
puree of 2 medium size tomatoes

Cumin seeds

A pinch
Asafetida (hing)

Red chilli powder

Turmeric powder
Salt to taste
fresh coriander leaves
for garnishing

Instructions
Heat a kadhai or pan and add oil.
When the oil is hot enough, add cumin, green chillies and asafetida.
Let them crackle for a few seconds.
Add the tomato puree.
Mix it.
Now add the spices – red chilli powder, turmeric powder and salt.
Again, mix it nicely.
Cover and cook until the oil separates.
Keep mixing at regular intervals.
After 2-3 minutes you can see the oil separating.
At this time, add the boiled potatoes.
Mix it.
Cook for 1-2 minutes.
Add water and adjust the consistency.
Mix and mash a few potatoes to make the gravy slightly thick.
Cover and cook for 2-3 minutes.
The simple & easy Aloo tamatar ki sabzi is ready.
Garnish it with fresh coriander leaves.
Serve it with hot & fluffy puris or paratha.
