Rinse the poha in running water 2-3 times
Add 2 tsp of sugar and keep it aside.
Now heat a kadhai and add oil for frying the peanuts.
Fry the peanuts for 2-3 minutes and keep them aside.
Add some more oil for making the poha or if you have added excess oil for frying the peanuts then just reduce the oil to 2-3 tbsp.
Now add cumin seeds, fennel seeds, mustard seeds, green chillies and curry leaves.
Let them crackle for a few seconds.
Add the onions, potatoes and peas.
Mix them well.
Add turmeric powder and some salt.
Cover and cook until the potatoes are soft and cooked.
After 1-2 minutes when the potatoes are cooked, add the poha.
Mix it well and add some salt if required.
Add lemon juice
Mix it well
Cover the lid and cook on low flame or no flame for 2-3 minutes.
Add the fried peanuts and chopped coriander leaves.
Batata poha or Aloo wala poha is ready to serve.
Serve it on a plate and garnish it with bhujiya sev and coriander leaves. Enjoy it with a cup of hot tea or coffee!!
