Boondi ka Raita is a refreshing classic yogurt-based dish that is not only easy to prepare but versatile enough to complement a variety of spicy Indian curries and biryanis.

Ingredients
  

  • 1 - 2 tbsp Boondi crispy fried gram flour balls, available at Indian grocery stores – 1-2 tbsp
  • 1 cup Curd or yogurt – 1 cup
  • ½ tsp Roasted cumin powder - ½ tsp
  • ½ tsp Black salt kala namak – ½ tsp
  • As per taste A pinch of Red chilli powder
  • Salt to taste
  • Finely chopped fresh cilantro coriander leaves
  • Finely chopped mint leaves optional
  • Small green chilli finely chopped (optional)

Instructions
 

Prepare the yogurt base (dahi):

  • Take a large mixing bowl, and whisk the curd (dahi) until smooth and creamy. If the yogurt is too thick, add a little water and whisk again to achieve a slightly runny consistency.

Season the Curd:

  • Add roasted cumin powder, red chilli powder, black salt, and regular salt to the whisked curd (dahi). Mix well to ensure all the spices are evenly incorporated.

Combine Boondi and Curd:

  • Add the boondi to the spiced curd and mix it gently.

Add fresh herbs:

  • Garnish the raita with some fresh coriander leaves, finely chopped chillies and mint leaves (optional).

Chill & Serve:

  • Refrigerate the Boondi Ka Raita for at least 30 minutes before serving. This allows the flavours to meld together beautifully.
