Khada Masala Pulao| Ghee Rice | खड़ा मसाला पुलाव

Khada Masala pulao/ Ghee Rice is a traditional Indian dish made with ghee (clarified butter), onions, dry fruits and many Indian spices. It is a flavourful pulao recipe without any vegetables.
 
Khada masala pulao is also known by the name “Ghee rice” in southern India.

Equipment

  • 1 Pressure Cooker

Ingredients
  

Ingredients: -

  • Whole Spices: -
  • Bay leaf – 1
  • Cinnamon stick – 1 inch
  • Star anise – 1
  • Clove – 2-3
  • Black peppercorns – 8-10
  • Green cardamom – 2-3
  • Black cardamom – 2-3
  • Cumin seeds – 1 tsp
  • Stone flower

Dry fruits: -

  • Cashews
  • Raisins

For Pulao or Ghee rice: -

  • Ghee- 2-3 tbsp
  • Basmati rice – 3 cups
  • Onion – 2-3
  • Ginger-garlic paste – 1 tbsp
  • Green chillies – 2-3
  • Salt to taste
  • Water – 6 cups double the quantity of rice

For Barista

  • Onion – 1-2 sliced
  • Oil – for frying

Instructions
 

Method: -

  • In a bowl take 3 cups of basmati rice.
  • Wash the rice in cold water until the water runs clear. Soak it for about 15-20 minutes.

Preparing the Barista: -

  • Take a wok or a kadhai and add some oil for frying the onion.
  • Add the sliced onions.
  • Fry on medium flame until crisp and golden brown.
  • Barista is ready.

Preparing the Khada Masala Pulao | Ghee Rice: -

  • In a large pot or a pressure cooker, add ghee.
  • Heat the ghee on medium flame.
  • Add the whole spices.
  • Let them crackle for a few seconds.
  • Now add the ginger-garlic paste.
  • Cook until the rawness of the ginger-garlic paste is gone.
  • Add green chillies.
  • After a few seconds add the sliced onion.
  • Sauté until the onions turn slightly golden brown.
  • At this stage, add the dry fruits and mix them nicely.
  • Now, add the soaked and drained Basmati rice to the pressure cooker.
  • Add salt to taste.
  • Gently mix the rice with the sautéed onions and spices, ensuring that the rice grains are coated with ghee.
  • Pour in the water (the quantity of water should be double the quantity of rice).
  • Give everything a good stir.
  • If using a pressure cooker, close the lid, and cook on low-medium flame for one whistle. Then turn off the heat and let the pressure release naturally. If using a regular pot, cover it with a tight-fitting lid and let the rice cook on low heat until all the water is absorbed, and the rice is fully cooked. It usually takes around 15-20 minutes.
  • Once the pressure is released, garnish it with the fried onions (barista).
  • Khada masala pulao is ready.
  • Serve the delicious Ghee Rice/Khada masala Pulao in a serving dish and garnished it with fresh coriander leaves.

Enjoy the khada masala pulao with chicken curry, shahi paneer, egg curry, chicken curry or any other curry of your choice. You can also have it simply as it is!!
