Paneer Masala is a delightful No-onion No-garlic Indian dish that is usually prepared with a rich and flavourful tomato-based gravy, perfect for any fasting or if you prefer food recipes without onion and garlic.
During Navratri and many other Indian festivals, people generally avoid eating onion and garlic and this Paneer masala recipe is a perfect solution for such occasions.

Ingredients
  

Ingredients: -

  • Paneer – 200 grams
  • Fresh cream – 1-2 tbsp
  • Oil – 3-4 tbsp
  • Tomato – 2
  • Green chillies – 2-3
  • Dalchini – 1 inch
  • Clove– 1-2
  • Green cardamom – 1-2
  • Black cardamom – 1
  • Cumin seeds – 1 tsp
  • Ginger – 1 inch
  • Bay leaf –
  • Red chilli powder – 1 tsp
  • Turmeric powder – ½ tsp
  • Coriander powder – 1 tsp
  • Garam masala powder – 1 tsp
  • Salt to taste
  • Kasturi methi – 1 tsp
  • Water for the gravy – ½ cup
  • Fresh coriander leaves for garnishing

Instructions
 

Method: - 

    Preparing the tomato paste: - 

    • Take a mixer jar and add the chopped tomatoes.
    • Add the green chillies and the whole spices.
    • Next, add some water and grind it into a smooth paste.
    • Keep it aside.

    Preparing the Paneer Gravy: -

    • Heat the oil in a pan or kadhai.
    • Add 1-2 bay leaves.
    • Next, add all the dry spices including and cook for a few seconds.
    • Add the tomato puree and mix it nicely.
    • Now, add salt according to taste.
    • Mix it nicely.
    • Cover the lid and continue to cook until the oil is separated.
    • Keep stirring at regular intervals to avoid sticking at the bottom of the pan/ kadhai.
    • While the gravy is getting ready, cut the paneer into small cubes and keep it aside.
    • When the oil separates add the kasturi methi and mix it nicely.
    • Next, pour the fresh cream and mix well.
    • Add some water to adjust the consistency and allow the gravy to simmer for a few minutes.

    Assemble and Serve: - 

    • Gently add the paneer cubes to the gravy.
    • Let the paneer simmer in the gravy for a few minutes.
    • Garnish with fresh coriander leaves.
    • No Onion No Garlic Paneer Masala is ready to be served. It pairs wonderfully with roti, paratha, poori or rice.
