Chicken in Oyster sauce is a Chinese stir-fried chicken recipe with Oyster sauce.

Oyster Sauce tastes like a combination of soy sauce and barbeque sauce and is both sweet and salty, but, it is less salty than soy sauce.

Unlike, chilli chicken, chicken in oyster sauce is less spicy with little sweetness, which contributes to its popularity amongst kids.

Oyster Sauce chicken

Chinese restaurants are known for making large quantity items in a short time. The secret is stir-frying i.e. speeding the cooking process by tossing small pieces of chicken, meat and vegetables in hot oil.

This chicken in oyster sauce is infused with immense flavour and aroma that will make you dRooLinG…!!! And I am pretty sure that you will not be able to resist trying to make it once.

The recipe is quite simple and easy to make, with some same basic steps that are followed in almost every Chinese dish.

This chicken in Oyster sauce/ Chinese chicken with oyster sauce can be served as an appetizer or it can also be served in the main course along with noodles, fried rice, sticky rice or with whatever you prefer.

In our home, we prefer eating it as a main course dish, along with some Hakka noodles or fried rice and sometimes with plain roti/ chapati.

So, let’s check out the recipe…!!!

Chicken in Oyster Sauce| Chinese Chicken with Oyster Sauce| Oyster sauce chicken

Ingredients:-

  1. Boneless chicken – 1 kg
  2. Oil – for frying the chicken

For marination:-

  1. Ginger-garlic (adrak-lehsun) paste – 1 tbsp
  2. Soy Sauce – 1-2 tbsp
  3. Vinegar (sirka) – 1 tbsp
  4. Salt (namak)- to taste
  5. Black pepper (kali mirch) powder- 1 tsp

For the sauce mixture:-

  1. Oyster sauce – 2 tsp
  2. Tomato sauce – 2 tsp
  3. Soy sauce – 2 tsp
  4. Chilli sauce – 1 tsp
  5. Vinegar – 1 tsp

For preparing chicken in Oyster Sauce:-

  1. Oil – 5-6 tbsp
  2. Dry red chilli (sukhi lal mirch)- 2
  3. Chopped garlic (lehsun) – 1 tbsp
  4. Green chillies (hari mirch) – 3-4 chopped
  5. Onion (pyaz) – 3-4 diced
  6. Capsicum (shimla mirch) – 2 sliced
  7. Corn flour – 1 tsp
  8. Salt – to taste
  9. Water – to adjust the consistency

Method:-

Marination:-

  1. For the marination, take the boneless chicken in a bowl.
  2. Add the ginger-garlic paste.
  3. Soy sauce
  4. Salt & pepper.
  5. Vinegar.
  6. Mix it nicely.
  7. Cover and leave the marinated chicken for a minimum of 20-25 minutes and if you have time you can marinate it for more by keeping it in the refrigerator.

Frying the chicken:-

  1. Take a wok/pan and add oil to shallow fry the marinated chicken pieces.
  2. Add the marinated chicken.
  3. Fry until golden brown from both sides.
  4. Keep changing sides to cook evenly.
  5. Take them out on a plate.
  6. Now, repeat the same steps for frying the remaining chicken.
  7. When the chicken is ready, start preparing the sauce.

Preparing Chicken in Oyster Sauce:-

  1. Remove the extra oil and keep approx. 5-6 tbsp of oil in the wok/pan.
  2. As the oil is already heated, add the dry red chillies.
  3. Now, add chopped garlic and green chillies.
  4. Let them crackle for few seconds.
  5. Now, add the diced onions.
  6. Sauté until they turn golden brown.
  7. Take a small bowl and add all the sauces mentioned above to create a sauce mix.
  8. Add this sauce mixture to the slightly golden brown onions.
  9. Mix it well and add some water if you want to make a semi-gravy chicken in oyster sauce.
  10. Cook for few minutes (1-2 minutes).
  11. Add salt to taste.

 (Tip – don’t add too much salt as we already added it during marination & there is salt in these sauces as well).

  1. Mix it well.
  2. And add the corn flour slurry. I prepared this corn flour slurry by adding and mixing 1 tsp of corn flour in water.
  3. Again, mix it well and cook for some time. You will notice that the sauce is turning thick with no excess water.
  4. Now, add the fried chicken pieces.
  5. Mix everything well.
  6. At the end add the sliced capsicum.
  7. Cook for few minutes.
  8. And the chicken in oyster sauce is ready. Serve it hot as an appetizer or you can also serve it in the main course along with some fried rice or noodles.
