Aloo Fry Recipe| Puri wale Aloo| Sukhi Aloo ki Sabji (without Garlic & Onion)

Aloo/ Potato are one of the most common vegetables that are present in our everyday meals, one way or the other.

We Indians are very fond of Aloo/Potatoes. It is one of our favourite vegetables that is included in almost every other dish we make. And this is not enough, apart from this, there are so many different varieties of “aloo ki sabji” as well.

Aloo is like our comfort food or we can say vegetable and there are so many different recipes like aloo gobhi, jhatpat aloo, aloo methi, aloo palak, aloo barbati, aloo chole, aloo matar, aloo fry, gravy aloo, aloo dam, aloo paratha, french fries and so many.

Today, we going to discuss Aloo Fry Recipe or Puri wale Aloo ki Sabji, which is a very simple, easy-to-make recipe yet it is spicy and delicious. It is a no onion no garlic vegan recipe that requires very few ingredients.

This aloo fry recipe tastes awesome with “hot puris (pooris)”, “aam ka achar” andaam ka ras or mango shake“, which is one of my favourite combinations, during the summer season for lunch/ dinner.

You can also serve this aloo ki sabji with chapatis, parathas or even with hot daal chawal. This aloo fry sabji can also be taken while travelling, as it lasts long because no such ingredient is used which can spoil it. The full recipe with step-by-step images and some secret tips are given below.

Few Secret Tips for Delicious Cooking

  1. When boiling the potatoes, do not overcook otherwise, the potatoes will get mashed while cooking and your sabji will turn into bharta (mixture).
  2. Heat the pan properly before adding the oil, to avoid sticking on the base of the pan.
  3. Also, make sure that the gas is on low flame or off while adding the dry masalas, otherwise, they will get burnt.

Ingredients:-

  1. Boiled Potatoes/ Aloo – 4-5 medium size
  2. Green chilli/ Hari mirch – 2-3 slit
  3. Fenugreek/ Methi Seeds – 6-7
  4. Red chilli/ Lal Mirch Powder- 1 tsp
  5. Turmeric/ Haldi Powder – 1/2 tsp
  6. Salt to taste
  7. Oil – 3-4 tbsp
  8. Fresh Coriander leaves – for garnishing

How to make Aloo Fry or Puri wale Aloo

Step-by-Step Recipe

  1. Wash the potatoes and pressure cook until 3-4 whistles.

 

  1. When the pressure is released open the lid and wash the potatoes in running water to remove the excess heat.

  1. Now peel the potatoes and cut them into pieces.

  1. Heat the pan nicely and add oil. I am using mustard oil but you can also use refined oil.

  1. When the oil gets heated lower the flame and add the fenugreek/methi seeds and let them crackle (once the flavour of the seeds gets released into the oil, you can remove them if you like).

  1. Now add the green chilli and let it crackle for a few seconds.

  1. When the chilli starts to crackle add the dry masala i.e. turmeric powder and red chilli powder.

  1. Mix them well.

  1. Now it’s time to add the boiled potatoes.

  1. Add the potatoes and mix them well.

  1. Add the salt according to the taste.

  1. Again mix well and cook for 10 – 15 minutes on low-medium flame.

 

  1. After 10 – 15 minutes our Aloo Fry/ Puri wale Aloo is ready.

  1. Garnish it with fresh coriander leaves and serve it hot with hot puris (pooris), chapatis or dal chawal.
