  1. Clean and wash the methi leaves nicely.

  1. After cleaning and washing, chop it and keep aside.

  1. Now slice the potatoes, as we do for finger chips.

  1. Once the preparations are done, heat the pan and add the oil.

I am using mustard oil because it gives a good aroma and colour to our sabji/curry, but you can use any other oil as well.

  1. When the oil gets heated, add garlic and red chilli.

  1. Let them crackle and then add the sliced potatoes.

  1. Add some salt to cook the potatoes and leave it for a minute or two.

  1. After 2 minutes add the chopped methi leaves and mix well.

  1. Now leave it on low- medium flame until fully cooked.

  1. Stir at regular intervals to avoid burning and sticking.

  1. After about 15-20 minutes you can see the potatoes are fully cooked and your Super Simple and Easy Methi ki Sabji is ready to be served.

  1. Serve it with Paratha, Roti or even Daal Chawal, the choice is yours. It tastes good with every combination.
