Aam ka achaar is a traditional Indian pickle made with raw mangoes and spices.
The spicy, sour and tangy taste of the Mango pickle is loved by many people and so it is the most popular pickle amongst all.
People always think that making a pickle is a big task and is time-consuming. Especially, our generation does not believe in making such things at home and we usually prefer buying it from outside.
But this season, my mother asked me to just try her recipe once and make the achaar at home. I agreed and tried her recipe… and guess what happened…???
I was amazed by the fact that it was not that tough and time-consuming as I thought and the only thing we need is to add all the ingredients in the correct ratios.
The recipe is simple and easy to follow and I am sure, that after trying this recipe you would also feel the same.
Aam ka achaar can be served with plain parathas, stuffed parathas, dal chawal, fried rice, lemon rice, cheele, etc. or with anything you like.
So let’s check out the recipe..!!!
Ingredients:-
- Raw mango – 1 kg
- Fennel seeds/ Sauf – 50 grams
- Red chilli/ lal mirch powder – 100 grams (or to taste)
- Turmeric/ Haldi powder – 50 grams
- Cumin/ Jeera -25 grams
- Fenugreek seeds/ Methi dana – 25 grams
- Yellow mustard seeds/ Sarson – 100 grams
- Salt – 150 grams (or to taste)
- Mustard Oil/ Sarson tel – 250 grams
How to make Aam ka Achaar | Mango Pickle| Traditional Indian Pickle Step by Step Recipe
Method:-
- Wash and dry the mangoes nicely.
- Cut them into pieces or, you can also buy sliced mangoes from the market.
- Sliced mangoes.
- Now, roast cumin, fennel seeds, fenugreek seeds and mustard seeds for 5-10 sec and then grind them to make the pickle masala.
- To make the pickle, take a big bowl and add the sliced mangoes.
- Now add the prepared pickle masala, salt, red chilli powder and turmeric.
- Add the mustard oil, but remember, we don’t have to add the whole quantity at once, but we need to add it slowly and as required.
- Mix it nicely.
- Add some more oil if required.
- Keep it overnight.
- The next day, mix it again and you can now see that the mangoes have released their juices and more oil can be seen than yesterday.
- Give it a good mix and at this step, you can also add some more oil if required.
- Store it in an airtight jar and it can stay for more than a year.
- Spicy Mango pickle/ Aam ka achaar is ready. Serve it with hot stuffed parathas (especially (aloo paratha,Methi ka paratha,) plain parathas, dal chawal, etc. or with anything you like.
Tip– Never use anything wet while making the pickle, as well as to serve it.
