Besan Ki Barfi is a very popular and traditional homemade Indian sweet made on different occasions and festivals.
Besan ki Barfi| Besan Mithai is prepared differently by different people but this recipe is a halwai style recipe made with gram flour (besan), sugar syrup and sooji.
It is one of the most prepared homemade sweets for different Indian Festivals and celebrations. Barfi can be prepared with all different types of flour and nuts, but the ideal one to prepare this burfi is gram/ chickpea flour.
This besan ki barfi has a smooth and creamy texture filled with flavours and aromas. Typically, besan barfi is prepared with just besan and sugar syrup. But in my marriage, I saw the halwai (person who cooks sweets in marriages) adding some amount of Rava or semolina which gives it a nice texture and so I too started making the barfi in this style.

- The proportion of different ingredients plays a very important role.
- The quality of flour should be good.
- Roasting is another important step. Always roast the besan mixture continuously on low flame; otherwise, it tends to get burn easily.
- The consistency of the sugar syrup decides the softness and hardness of the barfi.
- The sugar syrup should be of one-string consistency (refer to video) to get the desired texture.
- Too much Rava/ semolina/ sooji will make the barfi fragile, so you just have to stick to the exact quantities to make the perfect barfi at home.

Besan Ki Barfi| No Khoa Besan Burfi| Besan Mithai
Ingredients:-
- Desi Ghee – 1/4th cup + 1 tbsp
- Chickpea flour (Besan) – 1 cup
- Semolina (Sooji) – 2 tbsp
- Sugar – ½ cup
- Water for sugar syrup – ½ cup
- Cardamon powder – 1/4th tsp
- Ghee for greasing the mould – ½ tbsp
- Dry fruits for garnishing
Method:-
- Take a heavy bottom kadhai/ pan and keep it on a low flame.
- Add the desi ghee to the kadhai.
- Add 1 cup of gram flour/ besan and 2 tbsp of sooji.
- Mix it continuously to avoid any lumps.
- Roast the mixture on low flame.
- Add a spoonful of ghee if required.
- Keep roasting until it is slightly golden brown and fragrant. This normally takes around 5-10 minutes.
- After about 5-10 minutes, the mixture is ready.
- Keep the mixture aside and prepare the sugar syrup.
Preparing the sugar syrup:-
- Take a pan and add ½ cup of sugar.
- Add water and switch on the gas.
- Stir it continuously until the sugar dissolves.
- After the first boil, add the cardamom powder.
- Mix it nicely and cook until you get one-string consistency of the syrup. This usually takes 5-6 minutes.
Making Besan Barfi:-
- Add the sugar syrup slowly into the besan mixture and mix it simultaneously.
- Keep stirring the mixture on low flame until it is reduced to the desired consistency (refer to the video) for about a minute or two.
- Transfer the mixture into the greased mould.
- Level it to make sure it is uniformly settled.
- Garnish it with dry fruits and rest it for 1-2 hours.
- After 1-2 hours, cut it into pieces of the desired shape.
- Finally, besan ki burfi is ready. Store it in an air-tight container and enjoy.
