Chawal ki kheer or Rice Pudding is a very popular North Indian dessert, made for different occasions and festivals (Diwali, Rakhi, etc.) in our houses.
Chawal ki kheer is an Indian style pudding cooked with 3 basic ingredients rice, milk and sugar. It is one of the favourite sweet/dessert prepared throughout India.
It has different names in different parts of India, with minor regional changes in the taste. Kheer is also prepared as “prasad” for different festivals and is distributed in “bhandaras” during Durga puja.
The recipe given below is very simple and easy to make. There is no additional use of milkmaid or khoa/ mawa or cream. The whole recipe is made with only full cream milk. The step by step recipe with images at each step is discussed.
Before going to the recipe let’s discuss a few secret tips for delicious and amazing “Chawal ki Kheer“.
Secret tips for making Delicious Chawal ki Kheer
- Use full cream milk:- use of full cream milk give the kheer a naturally creamy texture without the need of adding extra ingredients like milkmaid, khoa etc.

Soak the rice:- never add raw rice without soaking to the milk. I always first wash and then soak the rice for at least 15-20 minutes.

Break the Rice granules:- always break the rice granules into small pieces as they increase in size after being cooked.

Slightly fry/sauté the rice:- I always sauté the rice in ghee for a minute or two before adding it to the milk. This enhances the taste of the “kheer” and it doesn’t feel like you are eating rice and milk “doodh chawal“.

Addition of sugar:- I always suggest adding the sugar at the end to avoid curding of milk (“doodh fatna“).
Chawal ki Kheer (no milkmaid)| Rice Pudding| Traditional Indian Dessert
Ingredients:-
- Full Cream Milk/ Doodh – 500 ml
- Rice/ Chawal – 1/4th cup
- Sugar – 5-6 tbsp or according to the taste
- Ghee – 1 tsp
- Dry fruits for garnishing
- Elaichi/ Cardamom powder – a pinch of it for flavouring
Method:-
How to make Chawal ki Kheer
- Take 1/4th cup of rice, wash it and keep it aside for about 15-20 minutes.
- Now take a heavy pan and add the full cream milk to it.
- Switch on the gas and cook on low-medium flame until the milk boils.
- Stir at regular intervals.
- Now, while the milk boils, let us prepare the rice.
- Heat a pan and add 1 tsp of ghee.
- Take the rice, mash it a little with your hand and then add this rice to the pan.
- Sauté it for a minute or two on low flame.
- Then add it to the milk after it boils.
- Mix it well and keep cooking until the milk thickens and the rice is cooked.
- Keep stirring at regular intervals to avoid sticking of the Kheer at the bottom of the pan.
- Once the rice is cooked, add the sugar and again mix it well until the sugar dissolves.
- Cook for a few minutes more and then add the cardamom powder.
- Mix it well again and switch off the gas.
- Now at the end, we will add the dry fruits and the kheer will be ready to serve.
- So, Chawal ki Kheer or Rice Pudding is ready. You can serve it hot or you can also refrigerate it once it cools whichever way you like.
