Shahi Tukda or Shahi Toast is a popular dessert from the Mughlai Cuisine.
Shahi means “royal” and Tukda means “piece“. So, Shahi Tukda is a “Royal Piece of dessert” that will add royalty to any of your celebrations.
It is very simple and easy to make dessert, yet delicious, making it perfect delight for all the sweet lovers.
Shahi tukda, also known as “double ka meetha“, made by deep- frying the bread slices in ghee or oil and then dunking them in sugar syrup (chashni), is a famous and traditional dessert of Hyderabad.
Typically, double ka meetha involves dipping of the fried bread first into the sugar syrup and then into “rabdi” making it extremely sweet.
I personally don’t like extreme sweetness plus it also reduces the crispiness of the shahi toast and so, I am not dipping them into the rabdi, but if you like it then you can add rabdi before serving.

Secret Tips for making Delicious Shahi Tukda / Shahi Toast
- Deep Frying the bread:- bread soaks oil very quickly and so make sure that you do not fry the bread slices at very low flame and this will make the toast very oily.
- Consistency of the Sugar Syrup/ Chashni:- do not over-cook the sugar syrup otherwise it will get thickened. The consistency of the sugar syrup should be neither too thin nor too thick. Cooking it for 10-12 minutes would be enough.
- Temperature of the Sugar Syrup:- when we dip the fried bread into the sugar syrup, make sure that the syrup is warm. If it is too hot, it will make your toast soft and the crispiness will be gone, or if it is too cold, it will not get absorbed properly.
Shahi Tukda | Shahi Toast | Hyderabadi Double ka Meetha recipe:-
Ingredients:-
- Bread – 4 slices
- Sugar – 1 cup
- Water – 1 cup
- Oil – for deep frying
- Green cardamom/ Elaichi – 2
- Dry fruits – for garnishing
Method:-
- In a pan add 1 cup sugar and 1 cup water to make sugar syrup/ chashni.
- Cook for about 5-10 minutes on low flame with constant stirring until the sugar dissolves.
- While the sugar syrup is in the making, let’s prepare our bread. Slice the bread into 4 pieces each, either square/ triangle whichever you like.
- Keep stirring the sugar syrup at regular intervals.
- After 5-10 minutes the sugar syrup is almost ready. Add the green cardamom and cook for a minute or two.
- The sugar syrup is ready. Now let’s prepare the toast.
- Heat a pan or kadhai and add oil for deep frying the bread.
- When the oil gets heated up add the bread slices.
- Fry them until golden brown.
- In the same way, fry all the slices.
- Now dip the fried slices into the sugar syrup/ chashni and coat them properly with the syrup on both sides.
- Place them on a serving plate and Garnish it with dry fruits.
- The delicious and Crispy Shahi Tukda/ Shahi Toast full of sugar syrup (ras bhara) are ready to be served.
