Eggless Banana Loaf | Banana Bread Recipe| No Yogurt Banana Loaf

Banana Loaf or Banana Bread is sweet, moist, cake-like bread made from ripped bananas.

Do you have ripped or over-ripped bananas at your home??? And you don’t know how to use them? Then you should definitely try this recipe.

This recipe is so far the best recipe for making moist, soft and fluffy banana loaf or banana bread. And if you follow all the steps and take the exact quantities; I am sure you will get the same taste you must have tasted in any bakery or patisserie or confectionery.

I often make banana loaf from the ripped bananas and with a mixture of whole wheat flour as well as all-purpose flour.

The reason behind using both the flour is that when I made the banana loaf with only whole wheat flour it turned out to be little chewy and if we only use the all-purpose flour then I don’t find it very healthy for the kids.

So, I prefer using a mixture of both all-purpose flour and whole wheat flour. The full step by step recipe with images at each step is discussed below.

The recipe is an eggless one and there is no yogurt or buttermilk or vinegar used. Also, I have not added any nuts or dry fruits, but if you wish to add, you can surely do it.

Ingredients:-

Dry ingredients:-
  1. All-purpose flour/ Maida – 3/4th cup
  2. Whole wheat flour/ Atta – 3/4th cup
  3. Baking soda – 1 tsp
  4. Baking powder – 1 tsp
  5. A pinch of salt
Wet ingredients:-
  1. Ripped bananas – 3
  2. Oil or butter- 1/2 cup
  3. Sugar – 3/4th cup
  4. Vanilla essence – 1 tsp

Note: Please don’t use oil with a strong fragrance, use any neutral flavoured oil.

How to make Delicious Eggless Banana Loaf
Step by Step with images
  1. Take the ripped bananas and cut them into pieces. Ripped or over-ripped bananas give great results.

  1. Now add 3/4th cup of sugar. You can adjust the quantity of the sugar depending upon the sweetness of the bananas and also according to your taste.

  1. Mash the bananas with the fork or with the blender and turn it into a smooth paste.

  1. Blend until the sugar dissolves completely and you get a smooth puree.

  1. Now add 1/2 cup oil or butter and make sure the oil you are using doesn’t have a strong fragrance. Use any neutral oil as we don’t want the fragrance of oil to dominate the whole fragrance.

  1. Add 1 tsp vanilla essence.

  1. Again blend the mixture.

  1. Now take 3/4th cup of all-purpose flour and 3/4th cup of whole wheat flour in a bowl and add to it both 1-1 tsp of baking powder and baking soda and a pinch of salt.

  1. Mix all the dry ingredients properly.

  1. Now add 1-1 tbsp of it into the banana puree and slowly mix the batter to form the smooth paste.

  1. Grease the bread tray or bread mould with oil.

  1. Transfer the banana loaf batter into the mould and pat it to remove the air bubbles if any.

Baking the banana loaf
  1. Pre-heat the oven or microwave at 1800

  1. Place the mould into the oven and bake the cake/loaf at 1800C for about 40 minutes.

  1. Or you can bake and check if it’s done by inserting a toothpick into it. If the toothpick comes out clean your cake or loaf is ready.

  1. Transfer the loaf on to a plate and allow it to cool or you can also enjoy it hot.

  1. Cut it into slices and serve.

  1. Your Vegan Banana loaf or Eggless Banana Loaf is ready and you can store it in a container for about 4-5 days.
