Kesar Makhana Kheer is usually made and served during the Indian festival Navratri or any other fasting days or vrat.
We are so much engrossed into Sabudana and sabudana made dishes, that we forget many other dishes that can be prepared for fasting other than sabudana.
This lip-smacking “Kesar Makhana Kheer” is one such dessert which is delicious as well as healthy & will energise you during your fasting.
The recipe for Kesar Makhana Kheer is quite simple & similar to other kheer/pudding recipes (like chawal ki kheer, sewai etc.) and will be a treat to your taste buds.
The creamy Kesar Makhana kheer is prepared using milk, fox nuts, sugar, saffron and dry fruits. The milk along with sugar and fox nuts is simmered on low flame until it turns thick & creamy, which is then flavoured with saffron, cardamom and at last dry fruits.
This delicious pudding can be served any time of the day during your fasting or you can also prepare it as dessert otherwise.

Falahari Kesar Makhana Kheer| Saffron Flavoured Fox Nut Pudding
Ingredients:-
- Milk (full cream)- 500ml or 2 cups
- Fox nuts/ Makhana – 1 cup
- Ghee – 1 tsp
- Sugar – 5-6 tsp (to taste)
- Saffron/ Kesar – 5-6 threads
- Green Cardamom/ Elaichi – 2-3 crushed
- Dry fruits – finely chopped
Method:-
How to make Delicious Falahari Kesar Makhana Kheer
- Heat a pan and add ghee.
- Add Fox nuts/ Makhana
- Roast it for a minute or two and keep them aside.
- Now in a thick bottomed pan, add 2 cups (500ml) full cream milk
- Let it simmer on low flame for 5-10 minutes.
- Keep stirring at regular intervals.
- When the milk thickens a bit add sugar.
- Stir until the sugar dissolves.
- Add the roasted makhana/ fox nut.
- Simmer on low flame until it turns thick and creamy.
- Add chopped dry fruits.
- Mix and add cardamom/ elaichi powder.
- Again mix it well and then add saffron/ kesar.
- After adding saffron cook it for 1-2 minutes more and your pudding will be ready.
- The Falahari Kesar Makhana Kheer is ready. Garnish it with some more dry fruits and serve it hot or chilled whichever way you prefer.
