Instant Veg Uttapam|How to make Uttapam in minutes| Mix Veg Uttapa Recipe

Uttapam is a very light and healthy breakfast recipe from the South Indian Cuisine.

Uttapam or Uttapa or Oothapam is usually prepared with the same rice and urad dal batter used to prepare dosa and idli but today I am going to discuss a very quick and easy way of making uttapam.

Normally for making uttapam you have to plan it, soak the rice and dal one day before, then prepare the batter and keep it the whole day to get fermented.

But with this recipe, you can prepare delicious and crispy uttapams in just a few minutes. These uttapams are made with rawa or sooji and you just have to leave the batter to rest for 10-15 minutes or only 10 minutes before preparing these yummy uttapams.

I usually prefer thin and crispy uttapams but the authentic way of preparing uttapams with the “dosa batter” does not give me that satisfaction and the uttapams were also not that crispy.

So I tried this recipe and after that, this is the only recipe followed for making uttapams in my house. This recipe is tasty as well as healthy as we are going to use a lot of veggies, making it full of nutrients.

It is a very nice way of eating so many vegetables at a time and also a good way of making your child eat the veggies without much of a pain.

The whole step by step recipe with images at each step is discussed below. Hope you will like it.

Ingredients:-                  

  1. Rawa/ Sooji – 2 cup
  2. Curd/ Dahi – 5-6 tbsp
  3. Onion/ Pyaaz – 1 medium size chopped
  4. Capsicum/ Shimla Mirch – 1 medium size chopped
  5. Tomato/ Tamatar – 1 medium size chopped
  6. Green chilli/ Hari mirch – 2-3 chopped
  7. Salt to taste
  8. Water – to adjust the consistency of the batter
  9. Oil – for cooking

Method:-

How to make Delicious & Crispy Uttapam

  1. Take 2 cups of rawa/sooji in a bowl.
  2. Add the curd.
  3. Mix it.
  4. Now slowly add water to adjust the consistency of the batter.
  5. Once the batter is ready, cover it and keep aside for about 10-15 minutes.
  6. In the meanwhile you can chop your veggies. I am using onion, capsicum, green chillies and tomato but you can add other veggies as well like cabbage, carrot, etc.
  7. After 10-15 minutes the batter is ready and we can now add our vegetables.
  8. Add all the veggies.
  9. Mix it.
  10. Now after mixing the veggies add salt according to the taste.
  11. And again give it a good mix and also add water if required.
  12. Check the consistency. The batter should be neither too thick nor too watery. (You can check the exact consistency in the recipe video given below).

Making the Uttapam

  1. To make uttapam heat the pan nicely before adding the batter.
  2. Now add about 2 tbsp of batter and spread it evenly with the help of the spoon/spatula.
  3. Make it like a pancake but not too thick.
  4. Drizzle some oil and let it cook on low – medium flame.
  5. After about 1-2 minutes, check and flip to the other side.
  6. Cook both the sides on low – medium flame until crispy.
  7. So the delicious and crispy Veg Uttapams are ready. Serve it hot with coconut chutney/ green chutney/ tomato chutney or sauce, whichever you like and a cup of hot tea/ coffee.

Preparing the Batter for the Uttapam
