Sabudana Vada is a very famous recipe made especially during fasting (Vrat).

Sabudana Vada also known as “sago vada” or “sabu vada” is a popular snack of Maharashtra. It is a deep-fried patty made with soaked tapioca pearls (sago), boiled potatoes, peanuts and herbs.

Crispy and Crunchy sabudana vada is not only a perfect tea-time snack but is also one of the most popular snacks during fasting (Vrat/Upvas).

Sabudana or tapioca pearls are naturally gluten-free and so can be used to make Indian fasting snacks like Sabudana vada, Sabudana Khichdi, and Sabudana kheer (dessert).

These vadas are usually served with green chutney/ tomato chutney or sauce along with a hot cup of ginger tea.

The recipe discussed below is a very simple and easy-to-make recipe and can be made during fasting as no flour has been used. Also, the salt used is rock salt which can be consumed during fasting.

Few benefits of Sabudana or Tapioca Pearls

  1. Helps in gaining weight:- as tapioca pearls/ sabudana is rich in carbohydrates and calories and is good for you if you want to gain weight.
  2. Helps in Digestion:- sabudana contains a good amount of fibre, protein, fats and carbohydrates which improves your metabolism and helps to prevent stomach-related problems like gas, constipation, indigestion etc.
  3. Good for the heart:- sabudana contains 0 (zero) cholesterol and so is good for the heart.
  4. Provides Energy:- another reason behind eating sabudana during fasting is, it provides energy to the body.

Ingredients:-

  1. Sabudana/ tapioca pearls – 1 cup
  2. Boiled potatoes/ Aloo – 2-3 medium size
  3. Green chilli/ Hari mirch – 3-4 finely chopped
  4. Cumin/ Jeera – 1- tsp
  5. Fresh coriander leaves/ Daniya Patti – 2 tbsp finely chopped
  6. Peanuts/ Moongfali – 1/2 cup
  7. Rock salt/ Sendha Namak – to taste

Method:-

How to make Sabudana Vada or Sago Vada
Step-by-Step Recipe
  1. Soak the sabudana/ tapioca pearls for about 1-2 hours.

  1. Dry roast the peanuts in a pan.

  1. Crush them into small pieces and keep them aside.

Note:- adding peanuts/groundnuts not only enhances the taste but also gives the crunchiness to the vadas.

  1. Mash the boiled potatoes and add them to the soaked sabudana.

  1. Also, add cumin green chilli and chopped fresh coriander leaves.

  1. Add the crushed peanuts.

  1. Salt to taste.

  1. Mix it all well.

  1. Now with the help of your hands make small patties or vadas from the mixture.

  1. Heat the pan and add oil for frying.

  1. When the oil gets heated, put 3-4 patties/ vadas at a time and deep fry them on medium flame.

  1. Keep changing the sides and fry until the vadas turn golden brown.

  1. Crispy & Crunchy Sabudana Vada is ready to be served hot. You can serve it with green chutney/ tomato chutney along with a cup of hot ginger tea.
