Sambhar Recipe | Tiffin Sambhar | South Indian Sambhar recipe

Sambhar is a traditional dish from South Indian cuisine, truly irresistible flavours.

Sambhar is a popular South Indian lentil-based vegetable stew/curry, prepared with pigeon pea lentil (arhar/toor dal), tamarind and a unique blend of spices called Sambhar masala/powder.

It has a high nutritive value as it is cooked with minimal oil and lots of vegetables making it healthier.

Idli Sambhar is an everyday dish in almost all South Indian Family and is also served in tiffin centres in different parts of South India, namely, Hyderabad, Bangalore, etc.

This Tiffin Sambhar recipe is very delicious and it can be served with different South Indian items like Idli, dosa, vada, uttapam etc. Or it can be served simply with plain steamed rice.

The full step by step recipe with images at each step is given below:-

Sambhar Recipe| Tiffin Sambhar| South Indian Sambhar Recipe

Ingredients:-

  1. Pigeon Pea lentil / Toor (arhar) Dal – 1 cup
  2. Oil/ tel – 3-4 tbsp
  3. Dry Red chilli/ / Khadi lal mirch – 2
  4. Red chilli powder/ Lal mirch powder – 1/4th tsp
  5. Mustard seeds/ Rai – 1 tsp
  6. Curry Leaves/ Meethi Neem – 10-12
  7. Onion/ Pyaz – 1 medium size chopped
  8. Drumsticks/ Munga – 1 stick cut into 4-5 small pieces
  9. Pumpkin/ Kaddu – 1 small cup (or as preferred)
  10. Ladies Finger/ Bhindi (Okra) – 2-3 chopped
  11. Tamarind/ Imli – 1 tbsp
  12. Sambhar masala – 2-3 tsp
  13. Jaggery/ Gud – 1 small piece
  14. Salt to taste
  15. Water to adjust the consistency

How to make Hotel Style Sambhar Recipe| Tiffin Sambhar| South Indian Sambhar Recipe

Method:-

Making the Tamarind pulp:-

  1. Soak the tamarind in water for about 20-30 minutes.
  2. Later Squeeze the tamarind soaked in water and extract the pulp.
  3. Strain it and keep it aside.

Preparing the Lentil:- 

  1. Wash the lentils nicely in running water.
  2. Transfer it to the pressure cooker.
  3. Add the turmeric powder, salt and hing (asafoetida).
  4. Now add water. You can adjust the water according to the consistency you prefer but don’t make it too watery.
  5. Pressure cook for about 5-7 whistles.
  6. After 5-7 whistles, the dal is ready.

Making Tiffin Sambhar:-

  1. Heat a pan and add oil.
  2. When the oil gets heated, add red dry chillies, mustard seeds & curry leaves and let them crackle.
  3. Add the chopped onion.
  4. Cook until it is slightly golden brown.
  5. Now, add the veggies – drumsticks, ladies finger, pumpkin, etc. (Note:-you can add any vegetable you like.)
  6. Sauté the vegetable for few minutes.
  7. Add a little salt. Adding salt reduces the cooking time of the veggies.
  8. Add sambhar masala.
  9. Mix it all well.
  10. Now add about 1/4th tsp of red chilli powder.
  11. Again mix it well.
  12. Cover the lid and cook for few minutes (1-2 mins) so that the veggies are fully cooked.
  13. After few minutes open the lid and add a small piece of jaggery.
  14. Mash it well and add the boiled lentil.
  15. Mix the lentil and the vegetables nicely.
  16. Add water to adjust the consistency. (Note:- I prefer medium consistency and so I am not adding too much water.)
  17. Also, add the tamarind pulp we prepared earlier.
  18. Mix it well.
  19. Now cover the lid and cook the sambhar for about 4-5 minutes.
  20. Open the lid and let it boil for a few minutes more and after that, the sambhar will be ready to be served hot.
  21. So, our Sambhar/ tiffin sambhar is ready and I am going to serve it hot with soft & fluffy idlis.
