Samosa Recipe| Street Style – Aloo Samosa| How to make Samosas at home

Samosas are the most liked street food amongst the North Indians. It is a fried or baked pastry with different types of fillings, such as spicy potatoes, onions, chicken, peas, paneer, lentil etc.

Samosas are a popular appetizer or snack among the students and bachelors as it is cheap, tasty and keep your stomach full.

People are usually very fond of Samosas and it is also served in the form of Chaat along with traditional white pea/chickpea preparation, garnished with yogurt, tamarind and green coriander chutney, chopped onions, coriander and some spices.

Normally, Samosas are salty and spicy but, they can also be prepared in sweet form. In Madhya Pradesh, Delhi, Punjab, Rajasthan, samosas are made with all-purpose flour, locally known as “maida”, stuffed with a spicy filling of potatoes, peas, green chillies and spices.

It is usually served hot with sweet and sour tamarind chutney and spicy green chutney, along with a cup of hot tea/ coffee.

Now the question is – Can we make these delicious samosas at home??? And the answer is YES. This recipe will give you the exact taste of a Punjabi Samosa or the one you must have eaten in MP, UP or Delhi. Follow the steps and you will end up with your homemade street style samosas.

The whole step by step recipe with images at each step is discussed below:-

Ingredients:-

For the Samosa Dough:-
  1. All-purpose flour/ Maida – 2 cups
  2. Salt – to taste
  3. Oil – 2-3 tbsp
  4. Carom Seeds/ Ajwain – 1tsp
  5. Water – for kneading the dough
For Aloo Masala or Aloo Stuffing:-
  1. Potatoes/ Aloo – 4-5 medium size (diced)
  2. Peas/ Matar – 1 small cup (optional)
  3. Green chilli/ Hari Mirch – 3-4 chopped
  4. Cumin seeds/ Jeera – 1 tsp
  5. Fennel seeds/ Sauf – 1/2 tsp
  6. Red chilli / Lal Mirch powder – 1/2 tsp
  7. Garam masala powder – 1/4 tsp
  8. Dry mango powder/ Amchur
  9. Salt – to taste
  10. Oil – 4-5 tbsp
For sealing the Samosas:-
  1. Water – 1/2 cup
  2. Maida – 1 tsp

Method:-

How to make Samosa
Preparing the dough:-
  1. Take a dry bowl and add the all-purpose flour, salt and carom seeds.

  1. Mix well and then add 2-3 tbsp of oil.

  1. Crumble and mix well. Make sure that the mixture holds the shape.

  1. Now add water as required, to knead the dough.

  1. Cover the dough and keep it aside for 15-20 minutes and in the meanwhile, we will prepare the Masala for the Samosas.
Preparing the Aloo Masala/ Samosa Stuffing
  1. Heat the oil in a pan. Add cumin, fennel seeds and chopped green chillies.

  1. Let them crackle for a few seconds and then add the diced potatoes.

  1. Mix it and add the spices i.e. red chilli powder, garam masala and salt to taste.

  1. Again mix it and cook for 2-3 minutes.

  1. After 2-3 minutes, add the peas and cook until the potato and peas soften.

(Note:- Peas are optional &  it is your own choice. But I prefer putting it as it adds a good taste and flavour to the samosas.)

  1. When both potato and peas soften, add the amchur powder and mix it well.

  1. Cook for another 2-3 minutes and the Aloo Masala/ Aloo stuffing is ready.

Mixture for sealing the samosas-

Before making the samosas, simply mix water and maida in a bowl and use this mix for sealing the samosas.

Making the Samosa:-
  1. Take the dough and make small balls from it.

  1. Now take one ball and roll it into a round or oval shape and then cut it into two equal portions with the help of a knife.

  1. To make the samosa, take one of the portions and make it into a cone and fill the stuffing.

  1. After filling the stuffing, apply the sealing mixture around the open ends and press firmly to seal the ends.

  1. In this way, we will make all samosas.

  1. Now heat the oil in a pan for deep frying the samosas.

  1. Put 3-4 samosas at a time for frying.

  1. Deep fry the samosas until golden brown on low to medium flame.

  1. So, Hot and Crispy Street Style Samosas are ready. Serve it hot with any chutney or sauce along with a cup of hot tea/ coffee.
