Sarson means “Mustard” and Saag means “green leafy vegetable” so, Sarson Da Saag is a curry made from mustard greens and some spices, such as ginger and garlic.
Sarson Da Saag is a popular vegetarian dish, cooked specially in winters and is typically served with bread popularly known as “makke di roti“.
So this combination of “Sarson Da Saag Te Makke Di Roti” is a very famous authentic dish from Punjab and is a special menu item in almost every restaurant during winters.
The taste of this mustard greens is quite bitter and pungent and so it often mixed with other green leafy vegetables such as palak, bathua, etc. to subdue its bitterness.
In this recipe, I am only going to use palak with saron to make this delicious saag. The recipe is quite simple and the only time taking thing is the preparation, i.e. cleaning and chopping of these leafy vegetables.
The whole step by step process with descriptive images is discussed below and if you follow each step, then you will get the same authentic taste from Punjab.
Ingredients:-
- Sarson ka Saag/Mustard greens – 500 grams
- Palak/Spinach – 150 grams
- Adrak/Ginger – 1.5 inch (approx)
- Lehsun/Garlic – 5-6 cloves
- Hari Mirch/Green chilli – 2-3
- Salt – to taste
- Butter – for cooking
How to make Sarson Da Saag | Authentic Punjabi Saag Recipe. Full Step by Step Recipe:-
Method:-
- The first step is to wash the greens properly in running water.
- Once they are washed, chop them roughly and put them in a pressure cooker.
- Now pressure cook for about 1-2 whistles.
- Drain the water hot water and let the greens cool down at room temperature.
- Once the greens cool down, put them in a blender.
- Blend them to form a thick paste and keep it aside.
- Now heat a pan and add some butter in it at low flame (be cautious while adding the butter, as burns very quickly. You may also add some oil if you don’t want the butter to get burnt).
- Add chopped ginger, garlic and green chilli.
- Sautรฉ for a minute or half.
- Now add the blended mixture and some water.
- Cook for 10-15 minutes until the oil starts leaving.
- Stir continuously at regular intervals to prevent the mixture from sticking at the bottom.
- When you see the oil separating, simmer for a minute or two and your Sarson Da Saag is ready.
- Add some butter on top and serve it HOT with Hot Makke Di Roti.
