Sevai | Vermicelli Pudding| Sevaiya ki Kheer| Festive Special – Meethi Sewai

Sevai / Sevaiya is another traditional dessert and is prepared for different occasions and festivals.

Sevai also known by the name Saemia is an Indian Dessert made with vermicelli and is a “festival delicacy” cooked in almost every home on the occasion of Eid.

Saemia can be made both sweet and salty but mostly it is served as a dessert on different occasions or festivals. In dessert also there are 2 varieties i.e. one in which milk is used and the other is without milk.

So, I am going to make the one in which milk is used. The recipe is quite simple and no special ingredients are used. Sevai / Semiyan kheer is made with milk, sugar and dry fruits in addition to the flavour of green cardamom.

Sevai| Vermicelli Pudding| Sevaiya ki Kheer| Festive Special – Meethi Sewai

Ingredients:-

  1. Sevai/ Vermicelli – 1 cup
  2. Milk full cream – 500 ml
  3. Sugar – 6-7 tsp (according to taste)
  4. Green Cardamom/ Elaichi powder – 1/4th tsp
  5. Ghee – 1-2 tsp
  6. Dry fruits – chopped

Method:-

How to make Delicious Sevai| Vermicelli Pudding| Sevaiya ki Kheer| Festive Special – Meethi Sewai

  1. Heat a heavy-bottomed pan and add ghee.
  2. Add broken sevai or vermicelli.
  3. Roast the sevai in ghee for 1-2 minutes until it changes colour. Keep aside.
  4. Now clean the pan or kadhai and add the milk.
  5. Simmer the milk on low flame for 5-10 minutes, until it turns little thick.
  6. Keep stirring at regular intervals to avoid sticking.
  7. Add the roasted sevai.
  8. Mix it all well and again cook on low flame (for 5-10 minutes) until it turns thick and creamy
  9. Now switch off the flame and add sugar.

(Note:– if we add sugar in the beginning the chances of curdling of milk increases.)

  1. Mix it nicely until the sugar dissolves.
  2. Add the cardamom powder and again give it a mix.
  3. Add dry fruits.
  4. The delicious Sevai /Sevaiya ki kheer is ready. Serve it hot or you can refrigerate it for few hours and serve it chilled.
