Shahi paneer is a popular and indulgent Indian dish that originates from Mughlai cuisine. It is known for its richness and taste.
Shahi paneer is a delicious and aromatic dish made with paneer (Indian cottage cheese) cooked in rich and creamy onion-tomato gravy that is full of Indian spices.
The word “shahi” means “royal”, which indicates the richness and opulence of this dish. It is a popular vegetarian dish and is quite common among people who enjoy vegetarian cuisine.
Shahi paneer is mostly prepared in two gravies – white gravy and brown or a little orangish gravy. The white one is quite creamy and sweet in taste however, the brown one is also creamy but it is also a little spicy. I prefer the brown or the orangish gravy shahi paneer as I don’t like too much sweetness in my food and in this recipe, all the flavours are perfectly balanced.
This brown or orangish gravy shahi paneer (Punjabi-style shahi paneer) would be loved by anyone who prefers a little spicy and brown gravy dishes over white gravy dishes.

How to make delicious Shahi Paneer Restaurant Style | Shahi Paneer Masala. Step-by-step recipe at images at each step: –
Ingredients: –
For the restaurant-style gravy: –
- Paneer – 200 grams
- Butter – 4 tbsp
- Oil – 3-4 tbsp
- Cream – ½ cup
- Cashew – 10 – 12
- Onion – 3 sliced
- Tomato – 2-3 sliced
- Green chillies – 3-4
- Ginger – 1 inch
- Garlic- 3-4 cloves
Whole spices: –
- Bay leaf – 2-3
- Cinnamon – 1 inch
- Black Cardamom -1
- Green Cardamom – 2
- Clove – 2
- Cumin seeds – 1 tsp
- Black peppercorns – 5-6
Dry spices: –
- Red chilli powder – 1- ½ tsp
- Coriander powder – 1 tsp
- Garam masala – 1 tsp
- Turmeric powder – ½ tsp
- Salt to taste
- Kasturi methi
- Cardamom powder
- Fresh coriander leaves for garnishing
Method: –
- Heat a pan and add 2 tbsp of butter.
- Add sliced onions and sauté for a few seconds.
- Now add sliced tomatoes, ginger, garlic and cashew.
- Add the whole spices.
- Add some water (about 1 cup).
- Add the salt according to the taste.
- Cover and cook until the tomatoes turn mushy. This will take around 10-15 minutes.
- After 10-15 minutes, the tomatoes are cooked and turned mushy.
- Switch off the gas and cool the mixture completely.
- When the mixture is completely cooled, transfer it into a mixer grinder.
- Grind it into a smooth paste.
Preparing the Restaurant Style gravy for the Shahi Paneer: –
- Heat the pan and add 2 tbsp of butter along with 3-4 tbsp of oil.
- Add the bay leaf.
- Add 1 small chopped onion and 3-4 green chillies.
- Sauté until it turns slightly golden.
- Add the red chilli powder.
- Cook for a few seconds and add the remaining dry spices.
- Add the prepared gravy mixture.
- Mix it nicely.
- Cover and cook until the oil separates.
- Keep stirring at regular intervals.
- When the oil starts separating, add the fresh cream.
- Mix it well and cook for another 1-2 minutes.
- After cooking for a few more minutes, add water to adjust the consistency of the gravy.
- Add the kasturi methi and cardamom powder.
- Mix it well.
- Cook for 3-4 minutes.
- Restaurant-style gravy is ready.
- Add the paneer pieces.
- Cover & cook for 1-2 minutes.
- Add 1-2 tbsp of fresh cream.
- Shahi paneer restaurant-style is ready.
- Serve it hot with hot chapatis or rice.
