Shakkar Para is a popular Dry Indian snack that is specially made during festivals like Holi & Diwali.
Shakkar Para| Shakkar Pare| Shankarpali| Shakerpara| Khurma is a sweet deep-fried, crispy, crunchy Indian cookie, usually prepared at home during festivals.
They are usually made in diamond/square shape with just a few basic ingredients namely: maida, sugar, ghee or oil.
It can be made in two different ways:-
1) Adding sugar to the dough itself and then deep-frying the diamond pieces
2) Making plain dough, without adding sugar and then coating the diamond-shaped pieces into the sugar syrup after deep frying.
In this recipe, we are going to make the delicious Shakkar Para using the first method i.e. adding the sugar into the dough and then the diamond/square shape pieces are deep-fried until crispy.
Important Tip:-
To make crispy & crunchy Shakkar Para it is very important to take the exact ratios of the ingredients, otherwise, it may become too soft or too hard and may even scatter while frying.
Shakkar Para Recipe| Shankarpali| Khurma| Festive Snacks recipe with step by step images and video are discussed below:-
Ingredients:-
- All-purpose flour/Maida – 2 cup
- Sugar/Shakkar – 1/2 cup
- Oil/Ghee – 1/3rd cup
- Warm water – 1/3rd cup
- Oil for frying
Method:-
- Take half a cup of sugar in a bowl.
- Now add warm water and oil.
- Mix them nicely until the sugar dissolves.
- Once the sugar dissolves, add the all-purpose flour/maida, 1-1 spoon at a time and keep mixing.
- Continue the process until we finish adding 2 cups of flour.
- Mix nicely and turn it into a soft dough. (Refer to video recipe for exact the process of dough making and softness of the dough.)
- Rest it for 15-20 minutes.
- The dough is ready.
- Divide the dough into equal parts.
- Take one part at a time and roll it like a thick round chapati. (For exact knowledge of thickness, refer to video recipe.)
- With the help of a knife, slice the rolled chapati into square or diamond shape pieces.
- Heat the oil for deep frying. Do not overheat.
- Gently add the sliced square/ diamond pieces into the medium hot oil.Note:- Flame should be medium-high at this time and when the shakkar para turns slightly golden, lower the flame.)
- Keep frying and turn gently as and when required.
- Fry until both sides turn crisp and golden.
- Take it out on tissue paper to remove excess oil. And add the next batch.
- Repeat the process until the dough is finished.
- Crispy & Crunchy Shakkar Para is ready.
- Let them cool down and then store them in an airtight container. It can stay easily for 10-15 days.
