Aloo tamatar ki sabji (without onion & garlic) or Vrat wali sabji is a popular curry from North India, known for its simplicity & flavours.
Aloo tamatar ki sabji is an easy and simple light-gravy-based curry made with boiled potatoes, tomatoes and a few basic spices. The recipe is very simple and can be prepared by anybody even if he/she is a beginner, student or bachelor.
In this video, we’ll be making aloo tamatar ki sabji (a potato curry without onion & garlic) using very less oil and spices. This dish is simple, light, and perfect for those who don’t like dishes with lots of masalas.
Also, it is a no-onion no-garlic curry and therefore can be prepared on the days of fasting/ vrat/ upwas. In my home, we usually serve this delicious curry with hot and crispy pooris like plain puri, methi poori, palak puri or different parathas like methi paratha, plain paratha, khasta kachori, etc.
This aloo tamatar ki sabji recipe is a great dish to make if you’re feeling lazy and don’t want to spend too much time preparing lunch/ dinner. It is perfect for those who want a light and easy meal, without all the fuss!!

Ingredients: –
- Oil – 2-3 tbsp
- Boiled potatoes – 3-4
- Tomato Puree of 2 medium size tomatoes
- Cumin seeds – 1 tsp
- Green chillies – 2-3 (slit from the middle)
- A pinch of asafetida (hing)
- Red chilli powder – 1 tsp
- Turmeric powder – 1 tsp
- Salt to taste
- Fresh coriander leaves – for garnish
- Water for the gravy – 2 cups (approx.)
How to make Aloo Tamatar ki sabji (without onion and garlic) | Vrat wali Sabji recipe. Step by Step recipe with images at each step: –
- Heat a kadhai or pan and add oil.
- When the oil is hot enough, add cumin, green chillies and asafetida.
- Let them crackle for a few seconds.
- Add the tomato puree.
- Mix it.
- Now add the spices – red chilli powder, turmeric powder and salt.
- Again, mix it nicely.
- Cover and cook until the oil separates.
- Keep mixing at regular intervals.
- After 2-3 minutes you can see the oil separating.
- At this time, add the boiled potatoes.
- Mix it.
- Cook for 1-2 minutes.
- Add water and adjust the consistency.
- Mix and mash a few potatoes to make the gravy slightly thick.
- Cover and cook for 2-3 minutes.
- The simple & easy Aloo tamatar ki sabzi is ready.
- Garnish it with fresh coriander leaves.
- Serve it with hot & fluffy puris or paratha.
