Boondi ka Raita is a refreshing classic yogurt-based dish that is not only easy to prepare but versatile enough to complement a variety of spicy Indian curries and biryanis.

 

Boondi ka raita is a North Indian raita that is made with curd (yogurt), melt-in-the-mouth boondi (fried gram flour balls), and a few ground spices and herbs. Its cooling properties and the delightful texture of crispy boondi soaked in creamy yogurt make it a favorite in households and festive occasions alike.

This raita is my favorite, and my husband, who never used to eat curd or raita, started eating it after tasting this raita. Now it is his favorite too. So, if you don’t like curd like my husband, just try this raita once, and I am sure you will become a fan too.

 

Wondering what is boondi?

Boondi are tiny fried balls made with gram flour. They are spherical in. shape hence the name boondi- derived from the hindi word “boond” which means droplets.

You can make boondi at home or the readymade boondi packets are available in every grocery or sweet shop in India.

There are generally 2 variants of boondi:

  • Plain or salted boondi (Haldiram’s Khara boondi)
  • Masala boondi

Boondi raita is made with plain or salted boondi and if you live outside India, you can buy boondi online or from any Indian grocery store.

Boondi is often used in various chaat recipes like Ragda Chaat, Pani Puri, Dahi Bhalla or dahi vada, for making boondi ladoo. It is also used in making tea-time snacks like homemade namkeens and mixtures.

Tips for Perfect Boondi Ka Raita:

  • Curd: use thick curd to make a nice and creamy raita otherwise it will be too watery.

 

  • Consistency: Adjust the consistency of the raita (only if required) by adding water little by little until you achieve the desired thickness.

 

  • Flavour Balance: Taste and adjust the salt and spices according to your preference. The balance of flavours is key to a great raita.

 

  • Freshness: Always use fresh yogurt for the best taste. Homemade yogurt can elevate the dish even more.

 

How to make Perfect Boondi ka Raita at home. Step-by-step recipe with images at each step: –

Ingredients: –

  1. Boondi (crispy fried gram flour balls, available at Indian grocery stores) – 1-2 tbsp
  2. Curd or yogurt – 1 cup
  3. Roasted cumin powder – ½ tsp
  4. Black salt (kala namak) – ½ tsp
  5. A pinch of Red chili powder
  6. Salt to taste

Optional ingredients:

  1. Finely chopped fresh cilantro (coriander leaves)
  2. Finely chopped mint leaves (optional)
  3. Small green chilli, finely chopped (optional)

 Method: –

  1. Prepare the yogurt base (dahi):
  • Take a large mixing bowl, and whisk the curd (dahi) until smooth and creamy. If the yogurt is too thick, add a little water and whisk again to achieve a slightly runny consistency.

  1. Season the Curd:
  • Add roasted cumin powder, red chilli powder, black salt, and regular salt to the whisked curd (dahi). Mix well to ensure all the spices are evenly incorporated.

  1. Combine Boondi and Curd:
  • Add the boondi to the spiced curd and mix it gently.

  1. Add fresh herbs:
  • Garnish the raita with some fresh coriander leaves, finely chopped chillies and mint leaves (optional).

  1. Chill & Serve:
  • Refrigerate the Boondi Ka Raita for at least 30 minutes before serving. This allows the flavours to meld together beautifully.
