Khada Masala Pulao | Ghee Rice | खड़ा मसाला पुलाव

Khada Masala pulao/ Ghee Rice is a traditional Indian dish made with ghee (clarified butter), onions, dry fruits and many Indian spices. It is a flavourful pulao recipe without any vegetables.

Khada Masala Pulao

Khada masala pulao is also known by the name “Ghee rice” in southern India. Ghee rice or khada masala pulao is a flavour-rich rice recipe that consists of different whole spices and each spice contributes its unique fragrance and aroma.

This recipe is a one-pot dish and can be enjoyed as it or, you can also serve it with any veg or non-veg curry like chole masala, chicken curry, shahi paneer, kadhi, dal makhani etc.

The most common spices found in Khada Masala Pulao or Ghee rice include cinnamon sticks, cloves, cardamom pods, bay leaves, and cumin seeds. However, the specific combination and personal preferences can vary from region to region.

Ghee Rice, also known as Nei Choru or Neychoru in some regions, is a flavorful and aromatic rice preparation that is often served on special occasions, festivals, and during feasts. This recipe is as simple as my jeera rice recipe and gets ready in just 15-20 minutes.

It is a simple recipe that will make you drool..!!

Ghee Rice

How to make this delicious Khada Masala Pulao | Ghee Rice | Nei Choru. Step-by-step recipe with images at each step:-

Ingredients: –

Whole Spices: –

  1. Bay leaf – 1
  2. Cinnamon stick – 1 inch
  3. Star anise – 1
  4. Clove – 2-3
  5. Black peppercorns – 8-10
  6. Green cardamom – 2-3
  7. Black cardamom – 2-3
  8. Cumin seeds – 1 tsp
  9. Stone flower

Dry fruits: –

  1. Cashews
  2. Raisins

For Pulao or Ghee rice: –

  1. Ghee- 2-3 tbsp
  2. Basmati rice – 3 cups
  3. Onion – 2-3
  4. Ginger-garlic paste – 1 tbsp
  5. Green chillies – 2-3
  6. Salt to taste
  7. Water – 6 cups (double the quantity of rice)

For Barista (fried onion): –

  1. Onion – 1-2 sliced
  2. Oil – for frying

Method:  –

  1. In a bowl take 3 cups of basmati rice.

  1. Wash the rice in cold water until the water runs clear. Soak it for about 15-20 minutes.

 

Preparing the Barista: –

  1. Take a wok or a kadhai and add some oil for frying the onion.

  1. Add the sliced onions.

  1. Fry on medium flame until crisp and golden brown.

  1. Barista is ready.

Preparing the Khada Masala Pulao | Ghee Rice: –

  1. In a large pot or a pressure cooker, add ghee.

  1. Heat the ghee on medium flame.

  1. Add the whole spices.

  1. Let them crackle for a few seconds.

  1. Now add the ginger-garlic paste.

  1. Cook until the rawness of the ginger-garlic paste is gone.

  1. Add green chillies.

  1. After a few seconds add the sliced onion.

  1. Sauté until the onions turn slightly golden brown.

  1. At this stage, add the dry fruits and mix them nicely.

  1. Now, add the soaked and drained Basmati rice to the pressure cooker.

  1. Add salt to taste.

  1. Gently mix the rice with the sautéed onions and spices, ensuring that the rice grains are coated with ghee.

  1. Pour in the water (the quantity of water should be double the quantity of rice).

  1. Give everything a good stir.

  1. If using a pressure cooker, close the lid, and cook on low-medium flame for one whistle. Then turn off the heat and let the pressure release naturally. If using a regular pot, cover it with a tight-fitting lid and let the rice cook on low heat until all the water is absorbed, and the rice is fully cooked. It usually takes around 15-20 minutes.

  1. Once the pressure is released, garnish it with the fried onions (barista).

  1. Khada masala pulao is ready.

  1. Serve the delicious Ghee Rice/Khada masala Pulao in a serving dish and garnished it with fresh coriander leaves.

Enjoy the khada masala pulao with chicken curry, shahi paneer, egg curry, chicken curry or any other curry of your choice. You can also have it simply as it is!!
